Baked Oatmeal with Dried Fruit & Nuts

Ingredients for Baked Oatmeal

2 cups steel cut oats
1 cup walnuts, or other nuts (see sources)
2 tablespoons goat yogurt
dash unrefined sea salt
6 pastured eggs
2 cups almond milk
up to ¼ cup maples syrup (optional)
½ cup raisins or dried cranberries
½ cup dried unsulfured apricots, diced
2 tablespoons cinnamon
¼ cup coconut oil, plus extra for greasing baking dish

Method for Preparing Baked Oatmeal
Pour the steel cut oats and nuts into a ceramic container or mixing bowl.
Add enough filtered water to completely submerge your oats and nuts. Add a dash of salt and a two tablespoons of goat milk
Allow the oats and nuts to soak, covered, overnight in a warm place in your kitchen – about eight to twelve hours.
After the mixture of oats and nuts has soaked overnight, dump them into a colander to drain and place the mixture back into the ceramic container or mixing bowl.
Preheat the oven to 375 degrees Fahrenheit and grease a 13 x 9-inch rectangular baking pan with coconut oil or another wholesome fat of your choosing.
Meanwhile beat together eggs, almond milk, maple syrup (if you’re using it), until well-combined and frothy.
Pour the mixture of eggs, milk and maple syrup over the soaked oats and nuts, stirring well to combine into a porridge-like mixture.
Gently fold dried fruit, cinnamon and coconut oil into the porridge-like mixture.
Pour the mixture into a greased baking pan and smooth it out with a rubber spatula to ensure even baking and a good appearance.
Bake in an oven preheated to 375 degrees Fahrenheit for forty to forty-five minutes or until the oatmeal achieves a pleasing golden-brown color on top, a knife inserted into its center comes out clean and free from liquid and the fragrance of baked oats, dried fruit and cinnamon perfumes your kitchen.
If you can bear the wait, allow the baked oatmeal to cool for five to ten minutes before cutting into squares and serving.

YIELD: 12 to 16 servings
TIME: 10 minutes (preparation), 8 to 12 hours (soaking), 40 to 45 minutes (baking)

Southwestern Shepherd’s Pie with Sweet Potato Mashers

I thought this would be a nice spin on the traditional shepherd’s pie. The sweet mashers are a wonderful contrast to the spicy beef and veggie filling. Another added benefit is that the spicy filling hides turnips very well. That comes in handy if you have plenty of turnips to use and your family is less-than-enamored with them.
* 3 large sweet potatoes, peeled and cubed
* 2 tablespoons olive oil
* Kosher salt and black pepper
* 3 tablespoons earth balance
* Honey
* 1 lb ground beef
* 1 medium onion, diced
* 3 large carrots, peeled and diced
* 3 large turnips, peeled and diced
* 2 cloves garlic, minced
* ¼ cup water
* 1 can chopped tomatoes, drained
* 3 tablespoons GF flour
* 1 can beef broth
* ½ cup frozen peas
* 1 tablespoon earth balance
* Cilantro, chopped

Preheat oven to 400 degrees. Toss the sweet potatoes with the olive oil and a generous pinch of salt and pepper. Place in a large roasting pan and bake, stirring occasionally, until tender and cooked through, about 20-30 minutes. Transfer the cooked sweet potatoes to a large bowl with the butter. Mash until smooth. Taste and adjust the seasoning with salt, pepper, and honey.
Meanwhile, brown the ground beef in a skillet over medium heat. Add the onions, carrots, and turnips and cook, stirring, until the carrots are cooked through. Add the garlic and cook for 1 minute longer. Add water, and tomatoes and simmer for 5 minutes. Sprinkle the flour over the mixture and stir in. Cook for about 3 minutes then add in the beef broth. Bring to a simmer and cook until thickened. Add the peas, season to taste, and remove from the heat.
Transfer the beef mixture into a large casserole dish. Top evenly with the sweet potatoes. Dot the top with the remaining tablespoon of butter. Bake until bubbly and hot. Serve warm with cilantro sprinkled over the mashers.

Beet Deviled Eggs

Pureed beets give these deviled eggs their pretty pink color.
They also add a nice earthy sweetness. Just in time for Valentines!
* 4-5 small beets, tops and roots removed, scrubbed
* 12 eggs, hard boiled and peeled
* ½ cup mayo
* 4 tablespoons dijon mustard
* 2 teaspoons lemon juice
* 1-2 teaspoons garlic powder
* 1-2 teaspoons onion powder
* Pinch cayenne
* Kosher salt and black pepper
* Green onions or chives, sliced very thin

Preheat the oven to 400 degrees.
Place the beets in a baking dish and add about of a cup of water. Cover tightly with foil and bake for 45 minutes, or until tender when pierced with a fork. Allow to cool until they can be handled.
Cut the eggs in half and carefully remove the yolks to a bowl. Reserve the whites.
Wearing gloves, carefully rub the peel off the beets. Place the beets in a food processor and puree until smooth. Add the egg yolks, mayo, dijon, lemon juice, garlic powder, onion powder, and cayenne. Season well with salt and black pepper and mix well until yolks are broken up and ingredients are evenly incorporated and smooth.
Pipe or spoon yolk mixture into reserved egg white halves. Sprinkle with the green onions and serve chilled.

Stuffed Cabbage with Quinoa + Roasted Sweet Potato

First:

Cook your cabbage. You'll need a fresh, large head of green cabbage. Trim the bottom root and cut an X into the center core. Bring a large pot of water to a boil and cook the head of cabbage for about five minutes until soft; remove and drain well.

Make the filling.

Preheat the oven to 375 degrees F.

For the filling you'll need:

2 medium sweet potatoes, peeled, diced
1 red onion, peeled, diced
1 large tart apple, such as Granny Smith, peeled, diced
3-4 cloves garlic, chopped
4 sausages- these can be sweet Italian, chicken apple, turkey, buffalo, cut into chunks
Extra virgin olive oil, as needed
1 cup natural apple juice or cider
1 tablespoon pure maple syrup
1 tablespoon balsamic or apple cider vinegar
Sprinkle of sea salt, cinnamon, nutmeg, fennel

To add in later:

A handful of raisins or dried cranberries
1 to 1 1/2 cups cooked quinoa

Throw the vegetables, apple, and sausage into a roasting pan and drizzle with a little olive oil. Add the apple juice, maple syrup, vinegar, salt and spices and toss well to coat. Roast in the oven till soft- about 40 to 50 minutes. Stir a few times during roasting to distribute the sauce and seasoning. Meanwhile make your sauce.

To make your sauce you'll need:

1 24-oz jar or can of strained tomatoes- I use Bionature Organic Strained Tomatoes
1/2 cup apple juice or cider
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
1 teaspoon onion powder
1 clove garlic, minced
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
Sea salt, to taste

Combine the sauce ingredients in a sauce pan and stir. Cook over medium heat until simmering. Cover and lower the heat to a gentle simmer. Taste test before using in the recipe. If you like a bit of spice, add a dash of hot pepper- but please taste test first.

To assemble:

Preheat oven to 350 degrees F.

Lightly oil four serving dishes or one medium-large baking dish.

When the cabbage has cooled enough for you to handle, cut another 1/2 inch or so off the bottom core if you need to and gently peel off the leaves one at a time; set the leaves aside on a plate or board. Trim any large leaves that may have a thick spine. Smaller leaves can be combined- use two to make one roll if you need to.

Combine the roasted vegetables and sausage with the cooked quinoa- start with a cup and see how much you need. If you want to stretch the filling, use more quinoa. Add a handful of raisins and stir in.

To stuff:

Lay a cabbage leaf on your work surface and add a spoonful of filling in the center. Fold in the side of the leaf and roll it up; tuck it into the prepared baking dish seam side down. Repeat for the remaining leaves and filling.

Pour the sauce over the stuffed cabbage and bake in the center of a preheated oven for about 30 minutes, till heated through and bubbling.

You can make this stuffed cabbage ahead of time, if you wish; cover and chill. Add an extra 10 minutes or so to the baking time.

Makes 4 to 6 servings.

Beef + Mushroom Stuffed Acorn Squash Recipe

Crank the oven to 400 degrees F.

Slice the acorn squash in half, lengthwise. Clean out the seeds. Place the halves skin side down in a broiler or roasting pan. [If any of the squash is really tippy- you can slice a thin piece off the bottom to make it sit still.]

Pour water into the pan- you'll need a good inch or two (this helps keep the squash from scorching/sticking to the pan). Prick the hollow of the squash with a fork to make a few tiny holes. Drizzle the squash with olive oil, and some pure maple syrup until it collects in the hollow. Don't be stingy with the maple syrup- you'll use it later. Season with sea salt. Place the pan into the preheated oven.

Roast the squash until it is fork tender-but not totally soft; you'll be baking it again.

Meanwhile- make your stuffing.

1 tablespoon olive oil
1/2 medium sweet or red onion, diced
5 cloves garlic, chopped
1 lb. organic grass fed ground beef/turkey
2 cups Baby Bella mushrooms, chopped
1 small green or red bell pepper, seeded, cored, diced
1/4 teaspoon cumin
1/4 teaspoon nutmeg
A dash of spicy curry, red pepper, or other spice, to taste
2 yellow tomatoes, seeded, diced
1-2 teaspoons dried Italian Herbs, to taste- basil, oregano, marjoram, sage, thyme
Splash of balsamic vinegar
1 Tablespoon agave nectar- or molasses
1/4 cup good ketchup- Muir Glen is good
1/2 cup of broth- such as Better Than Bouillon- Organic Beef- make and set aside
Fresh chopped parsley, as needed

Heat the olive oil in a large skillet and add the onion and garlic; stir for a minute or two. Add the ground beef, mushrooms, pepper and tomatoes; season with spices and herbs and stir. Brown the meat a good bit. Add a splash of balsamic vinegar, the agave nectar, and ketchup; stir; keep it on a low simmer and don't over-cook it. Take it off the heat as soon as the pinkness leaves the beef. Toss in some fresh chopped parsley.

Remove the squash halves from the oven. Let them cool a bit in the pan. When they have cooled enough to handle, pour off the syrupy liquid (captured in the hollow) into a large measuring cup. Set aside.

Lower the heat in the oven to 350 degrees F.

Stuff each squash with the beef-mushroom filling.

Add the broth you made earlier to the maple syrup-olive oil mixture and mix well. Pour a little over the filling of each squash.

If the water has totally evaporated from the pan, add more- just an inch or two. Bake the squash for 25 to 30 minutes (or a bit longer if the ingredients have cooled), until piping hot- and the squash is tender.

Note: cover loosely with foil, to help keep it moist, if you like.

For serving, sprinkle with some fresh chopped parsley.

Makes six servings.

Karina's Maple Meatloaf

1 3/4 lbs. organic grass fed free-range ground turkey
1 small sweet or red onion, peeled
1 medium to large organic carrot, washed and trimmed
4-5 cloves fresh peeled garlic
1/4 cup pure maple syrup
1/4 cup Muir Glen or Annie's Ketchup
1 tablespoon balsamic vinegar
2 organic free-range happy eggs- or omit for egg-free
1 scant cup (gluten-free) rolled oats, or your favorite gluten-free bread crumbs
A pinch of nutmeg
A pinch of allspice
A pinch of mild curry
A pinch of cinnamon
Sea salt and pepper, to taste

Preheat the oven to 350 degrees F.

Put the ground grass fed beef into a large bowl and using a fork or spoon, break it apart it a bit.

Roughly chop the onion and carrot into same sized chunks and place them into a food processor; add the garlic cloves; pulse until the veggies are uniformly diced- fine- not too chunky; add them to the meat. Toss lightly with a spoon or fork to quickly distribute the veggies. Add the maple syrup, ketchup, balsamic vinegar, eggs (if using), oatmeal or crumbs, and spices. Mix it all up- but try not to over-mix it into mush (over-mixing makes for a dense loaf).

If the mixture is too dry at this point, add a little more ketchup. If it's feels too wet, add more crumbs. You want a nice stick-together balance. Very ying-yang.

Spoon the meatloaf mixture into a standard size loaf pan and firmly press into place, smoothing and rounding the top of the loaf so that the sides are lower than the edge of the loaf pan (you don't want the glaze spilling over the sides later on).

Bake in a pre-heated oven for 45 minutes.
